No. 3823 — Nut Confections
English historical translation of Molokhovets recipe No. 3823 from the 1901 Russian cookbook, retaining original methods and measures.
Take three glasses roasted nut kernels and one glass honey.
The source includes an obsolete procedure involving a red-hot iron nail placed in the boiled honey, removed when it stops hissing.
Crush the kernels lightly into a few pieces each, stir them into the honey and cook until the mass separates from the pan.
Test a little on paper in the open air; when fully hardened, cool until firm enough to cut with a knife.
Historical editorial note: Never put a red-hot metal nail in food. It can cause violent spattering, burns and contamination; the historical step is not safe to reproduce.
