No. 3822 — Nuts in Honey
English historical translation of Molokhovets recipe No. 3822 from the 1901 Russian cookbook, retaining original methods and measures.
Shell fresh nuts, remove their thin inner skins and dry in the gentlest oven until almost crumbly, repeating on later days if required.
Boil pale honey while stirring until reddish, add enough nuts to make a thick mass and cook briefly.
Test a little on a spoon; when the honey sets, remove from the fire.
Spoon small heaps onto a water-moistened tray or dish. When cool and dry, pack in jars and keep cold and dry.
Historical editorial note: Hot syrup and honey cause serious burns; the historic method gives no verified modern storage duration.
