No. 382 — Rice Porridge for Broth
English historical translation of Molokhovets recipe No. 382 from the 1901 Russian cookbook, retaining original methods and measures.
Wash one glass of Carolina rice in cold water and drain. Cover with salted boiling water just to the surface, bring once to the boil, and drain in a colander.
Rinse with cold water, transfer to a small saucepan and pour over rich broth until barely covered. Cook, stirring, but do not let the rice become mushy.
To serve, form into a small mound on a round dish, optionally sprinkle with nutmeg and offer with clear broth No. 1 or No. 3, chicken broth, veal broth or a similar soup.
