No. 3817 — Keeping Hazelnuts Fresh
English historical translation of Molokhovets recipe No. 3817 from the 1901 Russian cookbook, retaining original methods and measures.
Gather ripe hazelnuts and drop them into a tub of water. The source says nuts that sink are the best, though very few do, making this test impractical for small harvests.
Alternatively choose sound ripe nuts, pack into tubs with damp sand between layers and keep in a cellar.
The author says they remain fresh through winter but begin sprouting in March and are then unsuitable for use.
Historical editorial note: The period storage descriptions are not validated freshness or microbial-safety tests.
