No. 3806 — Lemons Layered with Sugar
English historical translation of Molokhovets recipe No. 3806 from the 1901 Russian cookbook, retaining original methods and measures.
Cut the coloured outer peel from lemons, then slice the fruit thinly with a very sharp knife and remove the pips.
Pack in a jar with sugar, taking 2 pounds sugar for every pound prepared lemon slices.
Leave on a windowsill, turning the jar alternately towards the sun to dissolve the sugar.
Tie the top with animal bladder, keep somewhere cool and dry and serve with tea.
The removed lemon peel is reserved for flavouring spirits and liqueurs.
Historical editorial note: The original sun-warmed sugared-fruit storage is not a validated safe preserving method.
