No. 3804 — Keeping Lemons Fresh in Gooseberry Juice
English historical translation of Molokhovets recipe No. 3804 from the 1901 Russian cookbook, retaining original methods and measures.
Pack another portion of the lemons intended for storage into jars and cover with gooseberry juice from recipe No. 3356.
Cover the surface with Provençal (olive) oil and tie the jars with animal bladder and paper.
The author says the lemons remain fresh and the gooseberry juice acquires a lemon-like taste and aroma, suitable for lemonade or for adding acidity to other dishes.
Historical editorial note: Oil-topped, unvalidated fruit storage may create serious microbial hazards; this is a historical description, not safe canning advice.
