No. 3796 — Gooseberries Bottled for Sauces and Airy Pies

English historical translation of Molokhovets recipe No. 3796 from the 1901 Russian cookbook, retaining original methods and measures.

Gather green gooseberries, sort and wipe thoroughly dry. Pack in dry bottles, immediately cork and seal with resin; use later in sauces.

To make an airy pie, cook the gooseberries in water until soft, rub through a sieve and add sugar, vanilla and other flavourings.

Historical editorial note: Simply sealing fresh gooseberries in bottles without a validated preservation treatment risks spoilage and is unsafe as modern canning guidance.
