No. 3791 — Pickled Pumpkin

English historical translation of Molokhovets recipe No. 3791 from the 1901 Russian cookbook, retaining original methods and measures.

Peel and seed pumpkin, cut into serving wedges as for melon. Put into boiling water, bring to the boil once and drain in a sieve to cool.

Repeat blanching a second and third time, draining and cooling each time.

Use good vinegar with ½ glass honey or ¾ glass sugar for each glass vinegar. Boil, add the pumpkin and cook until tender.

Transfer to a bowl to cool and then pack into jars. Season the vinegar with spices as in recipes Nos. 3572 and 3573.

Historical editorial note: The historic vinegar and jar storage method does not specify validated final acidity for safe home preservation.
