No. 3775 — A New French Method of Keeping Grapes
English historical translation of Molokhovets recipe No. 3775 from the 1901 Russian cookbook, retaining original methods and measures.
Keep grapes on the vine as long as weather permits. When cutting bunches, retain a portion of the stem above and below, about two joints above and three or four below.
Seal the upper stem end with wax and immerse the lower stem end in a small glass flask of water mixed with a little wood ash, which the author believed would delay decay.
Close or wax the flask and keep the bunches in a cool frost-free place, resting on straw or preferably hanging them, provided the flasks are well secured.
Periodically remove berries that begin to spoil. The author says this method gave long-lasting freshness and that its inventor exhibited the preserved clusters publicly.
