No. 3774 — A Southern Russian Method for Preserving Grapes

English historical translation of Molokhovets recipe No. 3774 from the 1901 Russian cookbook, retaining original methods and measures.

Pick grapes before they become fully ripe and pack into large stoneware pots in layers of thoroughly dried millet or sawdust, ensuring berries do not touch.

Close the lids and seal them tightly. The author claims berries may ripen further in their pots, become sweeter and keep almost a year.

Historical editorial note: Sealed sawdust storage is not a validated modern method for keeping fresh grapes safe.
