No. 3773 — Keeping Grapes Fresh

English historical translation of Molokhovets recipe No. 3773 from the 1901 Russian cookbook, retaining original methods and measures.

The simplest method is to hang cut grape branches on poles in a cellar or unheated room that does not become freezing cold.

The author claims bunches last four or five months if rotting berries are removed continually.

She considers cellars better than dry rooms and suggests that somewhat damp air helps fruit retain freshness. By analogy she describes plums packed in pots with sand and buried in the ground.

Historical editorial note: The original humidity and four-to-five-month storage claims are historical, not verified contemporary guidance.
