No. 3770 — Refreshing Vladimir Cherries
English historical translation of Molokhovets recipe No. 3770 from the 1901 Russian cookbook, retaining original methods and measures.
Choose the ripest firm unblemished Vladimir cherries and soak them in purified grain spirit for 24 hours.
Drain thoroughly, then arrange in a jar with cinnamon, cloves and bay leaf. For one quarter-measure of cherries the source gives 2 lots spices, one quarter of which go on top.
Cover fully with fresh honey and hold down with a small board and stone. The original stores the jar on ice until frost, then in a dry cellar.
The author says many people prefer this dish to jam.
Historical editorial note: The author's historic alcohol-and-honey storage is not validated for modern preservation.
