No. 3766 — Quick Pickled Dried Cherries
English historical translation of Molokhovets recipe No. 3766 from the 1901 Russian cookbook, retaining original methods and measures.
To replace pickled cherries in a salad, take 1 bottle good Rhenish wine vinegar, 1 bottle water, 3 glasses sugar and spices as in recipe No. 3573.
Boil five or six times, then pour the hot liquid over dried cherries, with enough extra to let them float as they swell.
Cover and leave on a warm stove bench. The author says they may be prepared the day before serving.
Historical editorial note: Diluted vinegar and warm holding require contemporary food-handling safeguards.
