No. 3757 — Keeping Cherries Fresh in Bottles
English historical translation of Molokhovets recipe No. 3757 from the 1901 Russian cookbook, retaining original methods and measures.
Place ripe cherries in dry bottles and gently shake them. The author describes a period water-heating process using bottles packed with hay.
Once the surrounding water cooled, the bottles were sealed with resin and stored in sand for winter compotes.
Historical editorial note: Heating tightly stoppered bottles can cause pressure and breakage; this historical description is not validated modern canning guidance.
