No. 3756 — Keeping Cherries Fresh, Second Method
English historical translation of Molokhovets recipe No. 3756 from the 1901 Russian cookbook, retaining original methods and measures.
Leave a short stem on each firm ripe cherry. Make a thin syrup with 1 glass water and 1 glass sugar, keeping it warm over coals.
Holding cherries by their stems, dip in syrup, then immediately roll in finely pounded and sifted sugar.
Arrange without touching on a dish, dry in the gentlest oven and pack in jars to store dry.
Historical editorial note: The historic drying technique gives no validated final moisture or safe storage specifications.
