No. 3755 — Keeping Cherries Fresh
English historical translation of Molokhovets recipe No. 3755 from the 1901 Russian cookbook, retaining original methods and measures.
Pick ripe cherries after noon in dry weather, leaving a short stalk on each. Carefully pack in small barrels with thick cherry-leaf layers between the fruit.
Seal the barrels and bury in ice. The author claims the fruit can remain fresh until late autumn of the following year.
Historical editorial note: The claimed duration of fresh storage is not verified.
