No. 3748 — Dried Pears

English historical translation of Molokhovets recipe No. 3748 from the 1901 Russian cookbook, retaining original methods and measures.

Gather the ripest pears, including windfalls, but discard any completely spoiled fruit.

Without peeling, arrange on a straw-covered baking sheet and dry in the gentlest residual oven heat.

If needed repeat two or three times, or carry out to moving air immediately after the first oven drying and finish in a draft.

Historical editorial note: Fruit fallen on the ground needs careful safety assessment; the original does not specify verified drying temperatures or final moisture.
Original source: Read Russian recipe No. 3748. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
