No. 3740 — Keeping Hungarian Plums Fresh Until Christmas
English historical translation of Molokhovets recipe No. 3740 from the 1901 Russian cookbook, retaining original methods and measures.
In fine dry warm weather around midday, after dew dries, cut plums from the tree with scissors.
Pack immediately in jars layered with millet, or small barrels with cherry leaves or millet.
The source coats barrels with resin, covers jars with animal bladder and resin, buries jars one arshin deep in a cellar floor and lowers barrels into water.
