No. 3725 — Apple Marmalade

English historical translation of Molokhovets recipe No. 3725 from the 1901 Russian cookbook, retaining original methods and measures.

Prepare apple purée as described in recipe No. 3724. For 3 cups purée add 1½ cups sugar.

Cook until a little mixture placed on a spoon over ice begins to set and leaves the spoon.

Spread on a dish to the desired thickness. When set, cut into pieces as for pastila, sprinkle with sugar and store in jars or boxes.

If a little too soft, dry the dish in a warm oven; if very thin, boil again to the proper thickness.

Historical editorial note: A cold-spoon setting test does not validate long-term storage safety.
