No. 3723 — Apple Pastila with Honey

English historical translation of Molokhovets recipe No. 3723 from the 1901 Russian cookbook, retaining original methods and measures.

Bake sour Antonovka or Lemon apples on an iron tray, rub through a sieve and measure the purée. Beat in a stone bowl until pale.

For 2 glasses purée use 1 glass honey, first beaten pale by itself. Combine and beat until the mass is white and airy.

Pour into paper moulds about three finger-widths deep on an iron tray sprinkled with bran. Dry for several hours in a gently heated oven.

Remove the paper, pack into a jar or stack two or three sheets brushed with honey and return to the oven to dry.
