No. 3703 — Winter Apples

English historical translation of Molokhovets recipe No. 3703 from the 1901 Russian cookbook, retaining original methods and measures.

Winter apples were also stored in rye grain or fresh rye straw that had not undergone the usual drying for threshing, which the author says imparts a particular smell.

Cut the straw to pieces about the size of an oat grain, dry thoroughly on a clean warm stove bench or in the residual heat of an oven.

Pack apples in prepared boxes with generous layers of straw so they cannot touch one another.

Store in a cellar and inspect every month and a half. If the straw becomes damp, replace it with newly prepared dry straw.
