No. 3702 — Keeping Apples Fresh, Fourth Method
English historical translation of Molokhovets recipe No. 3702 from the 1901 Russian cookbook, retaining original methods and measures.
For apples arranged on shelves in a dry cellar, the author recommends sprinkling chlorinated lime over the supporting board to absorb moisture released by deteriorating fruit.
Shelves should be attached to the wall or hung from the ceiling with a slight slope so that moisture runs to one side into a receptacle.
Historical editorial note: Chlorinated lime can contain reactive bleaching chemicals and must not be used in contact with food. This obsolete storage technique is reproduced for historical purposes only.
