No. 3700 — Keeping Apples Fresh, Another Method
English historical translation of Molokhovets recipe No. 3700 from the 1901 Russian cookbook, retaining original methods and measures.
Store summer apples in copper pans with tin-lined interiors, covered tightly with lids and placed on ice.
Every two weeks dry both the apples and the inside of the saucepan and repack them; the author recommends doing this in the icehouse to avoid warming the fruit.
Winter varieties were kept until May in boxes layered with sand thoroughly dried in an oven.
Among the hardiest varieties the author names Oport apples and Antonovka. Keep the boxes in cold dry cellars where the apples cannot freeze.
Historical editorial note: The stated keeping periods reflect historical cellar practice rather than validated modern storage conditions.
