No. 3698 — Very Tasty American White Bread

English historical translation of Molokhovets recipe No. 3698 from the 1901 Russian cookbook, retaining original methods and measures.

Dissolve 2 zolotniks dried yeast in 1¼ glasses warm milk. Add ½ tablespoon fine sugar, 1 teaspoon salt and 1 pound fine wheat flour.

Mix and beat thoroughly, then put into a lightly buttered springform cake tin, filling it only halfway.

Leave warm for 1½ hours, then bake in a hot oven for about half an hour.

The dough should be fairly soft. For each pound flour the author permits up to about 1½ glasses milk, but no more.
