No. 3685 — Soda
English historical translation of Molokhovets recipe No. 3685 from the 1901 Russian cookbook, retaining original methods and measures.
For example, with 1 pound wheat flour and 1 pound buckwheat flour, the author combines 1 teaspoon acid and 1 teaspoon baking soda; see the Russian pancakes with soda.
In the period, the two powders could be bought separately, wrapped in white and blue paper, at pharmacies and druggist shops.
They were added to the dough immediately before baking.
Historical editorial note: The source does not identify which acid the separate pharmacy powder contained. Do not substitute an unidentified chemical in contemporary food.
Original source: Read Russian recipe No. 3685. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
