No. 3678 — Very Good Homemade Yeast
English historical translation of Molokhovets recipe No. 3678 from the 1901 Russian cookbook, retaining original methods and measures.
Boil together a large pinch of hops, 1 heaped teaspoon yellow honey and ½ glass water until the liquid reduces slightly.
Pour into a jar. After cooling somewhat, stir in 1½ tablespoons fine wheat flour and put somewhere warm.
The author says the starter will be ready after two days, or the following day if ½ tablespoon older yeast is added.
Historical editorial note: The historical spontaneous fermentation method does not provide modern safe handling or starter-quality testing.
