No. 3669 — Second Method for Storing Eggs
English historical translation of Molokhovets recipe No. 3669 from the 1901 Russian cookbook, retaining original methods and measures.
Lay eggs on straw-covered shelves in a cool, dry place so they cannot touch.
Start with the row closest to the user, then fill second, third and following rows as hens lay more eggs.
Use eggs from the nearest row first and continue in order.
The author suggests allocating spring eggs for use until winter and later-laid eggs for winter use.
Historical editorial note: The historic seasonal storage claim lacks modern controls for Salmonella and other contamination.
