No. 3668 — First Method for Storing Eggs

English historical translation of Molokhovets recipe No. 3668 from the 1901 Russian cookbook, retaining original methods and measures.

Rub very fresh eggs with a little oil or fat and arrange them pointed ends downward in a box of oats.

Cover each egg with enough oats that it cannot touch another, layer in rows, then cover with two vershoks oats; the uppermost layer should be twice as thick.

Nail the lid firmly shut and keep the box somewhere dry and cool.

The author also suggests packing eggs pointed ends down in thoroughly dried salt, oak ash or sand previously dried in an oven.

Historical editorial note: These historical ambient egg-storage methods are not replacements for modern refrigeration and safe egg handling.
