No. 3653 — Sweet Strawberry, Cherry or Raspberry Cheese

English historical translation of Molokhovets recipe No. 3653 from the 1901 Russian cookbook, retaining original methods and measures.

Prepare tvorog as in recipe No. 3652. After pressing until whey stops draining, put it on a dish and mix in enough raspberry, strawberry or cherry syrup to give both flavour and aroma.

If the colour is too pale, the original mentions adding cochineal. Mix, wrap in a napkin and, for Easter, set in a wooden mould decorated with young cress or parsley leaves.

Press again in a cold place. The author cautions against making a large batch because it begins spoiling after three or four days, and recommends setting it on ice overnight.

Historical editorial note: This is a perishable fresh dairy product. The source's three-to-four-day period is not a validated modern shelf-life claim; food-grade colourants only.
Original source: Read Russian recipe No. 3653. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
