No. 3641 — Inexpensive Butter Substitute with Potatoes
English historical translation of Molokhovets recipe No. 3641 from the 1901 Russian cookbook, retaining original methods and measures.
Boil 15 large clean potatoes, peel and rub through a fine sieve. Transfer to a butter churn.
Gradually add 8 tablespoons very hot water, beating continually and for another five minutes after the last drops.
Wash the resulting mass in iced cold water, salt lightly and serve.
Without a churn, the source suggests mixing in a stone bowl or soup bowl, adding water in the same order.
Historical editorial note: The original heading refers to 'butter with bread' but its method uses potatoes; the discrepancy has been preserved, not silently changed.
