No. 3640 — Almond or Pistachio Butter
English historical translation of Molokhovets recipe No. 3640 from the 1901 Russian cookbook, retaining original methods and measures.
Proceed just as with walnut butter in recipe No. 3639, using either 1 pound almonds with 10–12 bitter almonds added, or 1 pound pistachios.
Historical editorial note: Bitter almonds may contain cyanogenic compounds and should not be used indiscriminately in modern cooking.
