No. 3632 — Herring or Sardine Butter

English historical translation of Molokhovets recipe No. 3632 from the 1901 Russian cookbook, retaining original methods and measures.

Soak and wash 1 herring, remove the bones and chop finely. Bake an onion in hot ashes and put in a mortar.

If desired add rye bread, ⅛ pound according to the method, together with a freshly grated raw apple, nutmeg and 2 tablespoons fresh unsalted butter.

Pound everything, rub through a sieve, chill and serve as a starter or with new potatoes.

For an imitation whole herring presentation, shape the spread with the original fish head and tail and pour over 1 tablespoon olive oil.

Instead of herring, the author permits 10 sardines or 10 anchovies, washed and trimmed of heads and tails, omitting the apple.

The printed ingredient list gives 1 herring, ½ pound rye bread, 1 small apple, 1 onion, ¼ pound butter, nutmeg and 1 tablespoon olive oil.

Ingredients (as printed):

1 herring; ½ pound rye bread.

1 small apple and 1 onion.

¼ pound butter.

Nutmeg.

1 tablespoon olive oil.

Historical editorial note: The method says ⅛ pound rye bread while the final list says ½ pound; both readings are preserved. Fish-based dairy spreads should be kept properly refrigerated.
