No. 3627 — Keeping Butter by the American Method
English historical translation of Molokhovets recipe No. 3627 from the 1901 Russian cookbook, retaining original methods and measures.
Wash the butter in repeated changes of water until the last wash is perfectly clear, salt and mix thoroughly.
Then absorb every remaining trace of brine with a sponge wrapped in muslin. The author claims such butter keeps for a very long time.
