No. 3626 — A Third Butter-Preservation Method Using Salicylic Acid

English historical translation of Molokhovets recipe No. 3626 from the 1901 Russian cookbook, retaining original methods and measures.

Cover butter stored in tubs with cloth soaked in a salicylic acid solution; separately stored portions are wrapped in cloth soaked in the same liquid.

The source uses 2 teaspoons salicylic acid powder per bottle (3 glasses) clean water and directs shaking and closing the solution. It was kept out of sunlight and diluted with fresh water as used until sediment appeared.

The author instructs rinsing the butter before eating.

Historical editorial note: Salicylic acid treatment is an obsolete and potentially unsafe food-preservation practice; it must not be applied to edible butter.
Original source: Read Russian recipe No. 3626. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
