No. 3622 — A Fifth Method for Restoring Spoiled Butter
English historical translation of Molokhovets recipe No. 3622 from the 1901 Russian cookbook, retaining original methods and measures.
Select sound birch charcoal, crush in a mortar and sift out the ash. For 5 pounds butter use 2 teacups small charcoal pieces.
Melt the butter on the stove without bringing it to a boil. Add the charcoal and leave for a day in a place warm enough to keep it as thick as sour cream rather than solid.
Next day warm again without boiling and strain hot. The author says this removes the bitterness.
Historical editorial note: Unknown fireplace charcoal may contaminate food, and removal of bitterness does not establish safety of spoiled butter.
