No. 3621 — A Fourth Method for Restoring Spoiled Butter
English historical translation of Molokhovets recipe No. 3621 from the 1901 Russian cookbook, retaining original methods and measures.
Pour boiling water over the butter, mix, cool, drain the water, wash and salt.
To make it resemble smooth Finnish-style rather than Russian-style butter, beat with a spatula as it starts to set after the water has been drained.
