No. 3618 — Restoring Spoiled Finnish-Style Butter
English historical translation of Molokhovets recipe No. 3618 from the 1901 Russian cookbook, retaining original methods and measures.
The author advises repeatedly washing spoiled butter in fresh water, salting it and mixing in grated carrot juice pressed through cloth so that it is no longer visible.
The juice is said to give a delicate pleasant taste, but the source prefers adding it only shortly before use and preparing only a few days' supply.
Historical editorial note: Spoiled or rancid dairy must not be made safe to eat by washing or adding carrot juice; this is an archival description.
Original source: Read Russian recipe No. 3618. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
