No. 3606 — Green Rye Groats

English historical translation of Molokhovets recipe No. 3606 from the 1901 Russian cookbook, retaining original methods and measures.

Harvest rye while still green and tie sheaves no more than six vershoks around.

Bring salted water to a very vigorous boil, lower the ears from one sheaf, or at most two, into the kettle for no more than ten seconds, then remove. Allow the water to return to a boil before dipping the next sheaf.

Hang the sheaves on a fence to dry in the sun, finish drying in an oven, thresh and make groats from the grain.
