No. 3594 — Mustard Oil, Another Method
English historical translation of Molokhovets recipe No. 3594 from the 1901 Russian cookbook, retaining original methods and measures.
Remove husks from mustard seeds and pound thoroughly in a mortar. Transfer to a sieve and warm over steam from boiling water, stirring frequently.
The source recommends putting paper beneath the sieve to collect any falling meal, which is returned to it.
Pack the well-warmed seeds in pointed cloth bags and press the oil out. Reheat and press the meal repeatedly until oil stops dripping.
The author estimates a yield of 7–9 pounds oil from 1 pud mustard seed.
Historical editorial note: The historic method lacks modern food-grade oil extraction and safety controls; steam and hot press materials present burn risks.
