No. 3585 — French-Style Grey Mustard
English historical translation of Molokhovets recipe No. 3585 from the 1901 Russian cookbook, retaining original methods and measures.
Combine 1 pound grey mustard and ½ pound sugar. Gradually work in good Provençal olive oil with constant mixing until the mustard becomes a very thick oil-saturated mass.
Add 1½ zolotniks ground cinnamon and 1½ zolotniks ground cloves.
Thin with cold French vinegar to a porridge-like consistency, fill bottles, cork and keep for a week on a warm but not hot stove before using.
Historical editorial note: The original's warm storage and unspecified final acidity do not provide modern safe preservation guidance.
