No. 3584 — Grey Mustard
English historical translation of Molokhovets recipe No. 3584 from the 1901 Russian cookbook, retaining original methods and measures.
Mix 1 pound grey mustard with ½ pound sugar. Add ½ glass Graves white table wine and enough good vinegar to form a thin gruel.
Fill jars, cork and seal with resin, and keep in a warm room for three weeks. The author then considers it excellent mustard.
The Russian editorial note identifies vin de Graves as table wine.
Historical editorial note: Three weeks of room-temperature storage in sealed jars lacks validated acidity and microbial controls.
