No. 3581 — Excellent Apple Mustard
English historical translation of Molokhovets recipe No. 3581 from the 1901 Russian cookbook, retaining original methods and measures.
Bake good tart apples and rub them through a sieve while still hot.
To 3 spoonfuls yellow mustard add 4 spoonfuls apple purée and mix. Stir in 2 heaped tablespoons sugar, then thin thoroughly with vinegar previously boiled with pickling spices.
If desired, add 2 teaspoons salt. The author praises the flavour and recommends beginning to use the mustard after at least three days.
Historical editorial note: The source gives no validated safe storage conditions or acidity for the mixed condiment.
