No. 3565 — Red Beer Vinegar
English historical translation of Molokhovets recipe No. 3565 from the 1901 Russian cookbook, retaining original methods and measures.
For 4 vedros sour beer take 1 pound hot rye bread without crusts, 4 glasses honey or 8 glasses dark molasses, and a sheet of ordinary white writing paper coated on both sides with honey.
Put everything in a barrel on a warm stove, standing the barrel on supports or a thick board so it does not overheat.
Cover the bunghole with cloth rather than corking, sealing the cloth edges with clay or soft bread.
Historical editorial note: Ordinary writing paper, uncontrolled fermentation and unknown acidity make this archival method unsuitable for safe modern pickling.
