No. 3561 — Birch-Sap Vinegar

English historical translation of Molokhovets recipe No. 3561 from the 1901 Russian cookbook, retaining original methods and measures.

In spring, especially April, combine 2 vedros birch sap and 2–3 bottles good ordinary vodka in a barrel.

Add 1 pound honey spread onto blue paper. Leave in warmth with the barrel opening covered by a cloth but not corked.

The author describes the result as unusually pleasant and healthful.

Historical editorial note: Blue paper may contain unsuitable dyes or other contaminants; the historical health and fermentation claims are not validated.
