No. 3559 — Tarragon Vinegar
English historical translation of Molokhovets recipe No. 3559 from the 1901 Russian cookbook, retaining original methods and measures.
For 1 garnetz (4 bottles) vinegar made by the preceding method, or recipe No. 3562 or No. 3563, take 2 glasses washed and dried tarragon leaves and stems.
Put the tarragon with the vinegar in a large bottle, covered only with linen rather than corked.
Keep warm for no longer than a month, then strain, bottle and cork.
Historical editorial note: The linked source vinegars are not validated modern food-grade fermentation methods; their acidity must not be assumed.
Original source: Read Russian recipe No. 3559. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
