No. 3516 — Homemade Lemonade Gazeuse

English historical translation of Molokhovets recipe No. 3516 from the 1901 Russian cookbook, retaining original methods and measures.

The original describes a sparkling lemonade made from 26 bottles boiled and cooled water, ½ pound currant leaves, 6 lemons cut into small seedless pieces, 8 pounds sugar and 42 zolotniks cream of tartar.

The mixture is shaken in a large bottle, kept in an ice cellar for one day, and then exposed to sunlight for three days.

It is then bottled, tightly corked and stored on ice until use.

Historical editorial note: Tightly sealed bottles of a potentially fermenting drink can develop dangerous pressure and burst. The source's process is historical, not a validated modern safe-carbonation method.
Original source: Read Russian recipe No. 3516. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
