No. 3507 — Nourishing Coffee Substitute Made from Rye Flour

English historical translation of Molokhovets recipe No. 3507 from the 1901 Russian cookbook, retaining original methods and measures.

Mix 1 bottle of the freshest warm milk, 3 very fresh eggs and 3 pounds rye flour into a stiff noodle-like dough. Roll very thinly, spread on an iron baking sheet and bake until dry.

Break into small pieces and dry and brown again without burning. Pound the pieces and grind them in a coffee mill.

The source gives 6 glasses of the resulting ground rye 'coffee' and suggests drinking it instead of tea morning, afternoon and evening, with milk or cream.

Historical editorial note: The author's description of the drink as highly nourishing is a historical judgement rather than a modern nutritional assessment.
Original source: Read Russian recipe No. 3507. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
