No. 3478 — Liqueurs: Another General Method

English historical translation of Molokhovets recipe No. 3478 from the 1901 Russian cookbook, retaining original methods and measures.

The source proposes making a base from half a vedro of purified spirit, whose strength is printed as '8%', combined with syrup made from ¼ vedro water and 19 pounds sugar.

The hot syrup is poured into the spirit and shaken. The sweetened spirit was then kept as the basis for liqueurs and flavoured vodkas.

When needed, a purchased flavour essence is added to taste. The author recommends leaving it a day or two, and longer if possible.

Historical editorial note: The printed '8%' may be a transcription error, but is retained without silently changing it to '80%'. The historical use of hot syrup with strong spirit presents fire hazards.
Original source: Read Russian recipe No. 3478. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
