No. 3469 — Raspberry Vodka

English historical translation of Molokhovets recipe No. 3469 from the 1901 Russian cookbook, retaining original methods and measures.

Fill a large bottle with ripe sorted raspberries and just cover with spirit that the author describes as triple-purified. Stand in sunshine and drain the spirit after two or three days.

For ¼ vedro spirit the source gives 3 glasses water and 1½ pounds sugar. It describes boiling the sugar with water, skimming twice, then combining with the raspberry infusion.

For clarification, it suggests straining through flannel or through a funnel layered with cotton, crushed charcoal and flannel. The bottled drink is left in warmth for several weeks to settle, then carefully decanted.

The author also offers a faster clarification method involving 10–15 grains of potash dissolved in warm water per ¼ vedro vodka, followed by filtration.

Historical editorial note: Potash is not a food-safe substitute for validated alcohol purification, and adding alcoholic liquids to hot syrup carries a fire risk. These are historical descriptions only.
