No. 3468 — Sweet Vodka with Three Kinds of Fruit

English historical translation of Molokhovets recipe No. 3468 from the 1901 Russian cookbook, retaining original methods and measures.

The source takes 6 pounds cherries, 3 pounds redcurrants and 3 pounds raspberries, pounds them together and leaves the mixture in a bowl for five or six hours.

The juice is pressed out, preferably using a press. It is combined with an equal weight French or comparably strong purified vodka, then with ½ pound sifted refined sugar for every pound of that mixture.

For every 6 pounds of the resulting liquid the author adds 2 lots pounded bitter almonds, 1 zolotnik cinnamon and ½ zolotnik cloves.

The mixture is placed in a bottle, closed with a cork and wet animal-bladder cover, and kept in sunlight six weeks while being shaken three or four times daily.

Finally it is strained, bottled and stored in a cellar.

Historical editorial note: Bitter almonds can contain cyanogenic compounds; the period method is not a modern safe beverage formulation. Historical warm storage and seals are also unvalidated.
Original source: Read Russian recipe No. 3468. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
